Green Curry Chicken

(serves 4)
INGREDIENTS
  • 400g chicken fillets (skin off), diced
  • 4 teaspoons green curry paste
  • 2 medium carrots, peeled and sliced
  • 1 onion, chopped
  • 95g can baby corn
  • 1 bunch bok choy
  • 375ml can low-fat evaporated milk
  • 2 tablespoons coconut essence
  • 2 cups steamed rice
Method
  1. Coat a non-stick fry pan with cooking spray and lightly cook chicken in curry paste.
  2. Remove from pan.
  3. Spray frying pan again, add carrot, onion and corn and toss for 2-3 minutes.
  4. Add bok choy and evaporated milk, stirring constantly.
  5. Once mixture starts to thicken, add essence and chicken.
  6. Serve on bed of steamed rice.
