Green Curry Chicken

INGREDIENTS
- 400g chicken fillets (skin off), diced
- 4 teaspoons green curry paste
- 2 medium carrots, peeled and sliced
- 1 onion, chopped
- 95g can baby corn
- 1 bunch bok choy
- 375ml can low-fat evaporated milk
- 2 tablespoons coconut essence
- 2 cups steamed rice
Method
- Coat a non-stick fry pan with cooking spray and lightly cook chicken in curry paste.
- Remove from pan.
- Spray frying pan again, add carrot, onion and corn and toss for 2-3 minutes.
- Add bok choy and evaporated milk, stirring constantly.
- Once mixture starts to thicken, add essence and chicken.
- Serve on bed of steamed rice.
