Potato, Carrot and Zucchini Patties

INGREDIENTS
- 2 large potatoes, peeled and grated
- 1 large carrot, peeled and grated
- 1 zucchini, peeled and grated
- Pinch of salt
- 2 eggs
- 2 teaspoons dried thyme
- ¼ cup plain flour
- ½ teaspoon lemon pepper seasoning
- Mixed salad leaves and lemon wedges for garnish
Method
- Mix potato, carrot, zucchini, onion and salt together. Rinse in colander and leave to drain for 15-20 minutes.
- In a bowl, lightly beat eggs and stir in thyme, flour and lemon pepper seasoning.
- Fold in drained vegetables.
- Spray a little light olive oil into a non-stick frying pan. Heat until hot, then add two tablespoonfuls of batter per patty, flattening tem with a spatula as they cook.
- Cook for 3-4 minutes each side until golden brown. Keep warm until all patties are done (should make about eight).
- Garnish with salad leaves and lemon wedges.
